A gap on the shelf is not an unfinished drawing: it is a sale that doesn't happen.

The planogram says where each product goes on each shelf, and the colour identifies the product in the drawing, not the category: you recognise it at a glance from the other end of the aisle.

When restocking, an empty slot is not a picture: it is a product with its rotation, its margin and its stock, so you know what it costs to leave it empty.
