Inventory is an append-only ledger of movements: if the balance ever fails to add up, it is rebuilt in full from the ledger, because the ledger is what counts. And when you sell a dish, its ingredients come out, not the dish.
Inventory is not a number somebody corrects now and then: it is a ledger of movements that only ever grows. When the till sends a ticket, what was sold goes out; when you approve a purchase invoice, what was bought comes in.
If one day the balance looks wrong, it is recomputed from the ledger, because the ledger is what counts. And if you sell a dish, its ingredients come out, not the dish.
