From batch to sale in two hops: that is what a recall asks for, and it must come the same day.
This is where what sticks to the product lives: the allergens of each dish, the labels with their use-by date and the batch each thing came from.
Traceability only matters on one day, the recall, and that day cannot be rebuilt from delivery notes in a folder.
